No Wheat Flat Bread

This recipe is great for those who can not eat wheat flour, however still want a little bread with a meal from time to time.  It is also a very versatile recipe.

1 Cup Sifted Corn Flour
1 Large Egg
1 3/4 Cup Milk
4 Tbsp Olive Oil
1 tsp Salt
1/2 tsp Baking Powder

Combine the dry ingredients and sift.  Combine the wet ingredients in a separate bowl and whisk until all ingredients are blended well.  Slowly combine wet and dry ingredients.  Mixture will be some what thin.

I use an ice cream scoop to measure out batter for each serving.

Heat griddle (I use setting #4 on the stove) and cook bread (will look like pancakes and can be eaten as such) until brown on each side (about two minutes each – depends on your stove and what setting you use).

I usually make up a big batch on the weekend and then refrigerated until needed.  Just turn the broiler on and heat in the oven or use a toaster.

You can also add cheese, herbs, onion or what ever you like to the cakes.

Recipe: Sweet Corn Casserole

Ingredients1/4 cup butter or margarine (1/2 stick)
2 Tbs vegetable shortening
1/2 cup masa harina flour (Mexican corn masa mix)
2 cups loose-pack frozen whole-kernel corn, partially thawed
3 Tbs cold water
3 Tbs Yellow Corn Meal
1/4 cup granulated sugar
2 Tbs NESTLÉ® CARNATION® Evaporated Milk (optional)
1/4 tsp baking powder
1/4 tsp salt
1 tsp chili powder (optional)

DirectionsPREHEAT oven to 350° F. Lightly grease 9-inch pie plate.

PLACE butter, vegetable shortening and flour in food processor; cover. Process until creamy. Add water and corn; process until corn is coarsely chopped. Combine corn meal, sugar, evaporated milk, baking powder and salt in medium bowl. Stir in corn mixture until combined. Spread into prepared pie plate. Sprinkle with chili powder.

BAKE for 40 to 45 minutes or until firm and lightly browned around edge. Cool on wire rack for 15 minutes before serving. Scoop or cut into wedges to serve.

Taste of the Town 2009

Last night’s Taste of the Town was a wonderful event.  It was an evening of food (so much food), music, dancing, there was a silent auction and lots of good conversations with friends.  All of this to support Hospice.

As you walked through the downstairs area of Showplace there were food stations by  Bimini’s Oyster Bar, Blue Water Grille, Dan Thai Jazz Bistro, Liberty Steakhouse, and Peppermoon Catering just to name a few.  It was only $5 to gain entrance into the event and the food tickets were $1 each.  We ended up purchasing chocolate to bring home with the tickets we had left over because there was no way we could eat one more bite.

Event goers were having fun sampling the many food options and dancing to the tunes of Timeless and MTP DJ Productions.  It was definitely an evening worth attending.

A special “Thank You” goes out to Hospice for all the wonderful work they do and to everyone who attended last night event.

Fidscapes

I had the priviledge this past weekend to hang out with Philip Fidler. Just to be in his company is a true blessing with his very easy going demeanor, pleasant personality and gentle spirit. Philip has seen and experienced much in his life and has now decided to become more grounded and by that I really do mean grounded. Philip has decided to start his very own landscaping company. Fidscapes is Philip’s creation and he wishes to share his love for nature and landscape restoration with everyone.

I asked Philip to tell me why he decided to start such a back breaking business and this is what he says: “I need to earn an income and why not do something that I enjoy doing.  I also wanted to be able to help people out in these hard times by offering top quality work at a fraction of the cost of hiring a larger company. Taste of the Town 2009

Ok, let’s all get out there and support the wonderful work that Hospice of the Triad does in our community.

Taste of the Town offers some amazing food and gives you the chance to sample some of the local fair for a very reasonable cost. Tickets to enter the event are only $5 and food tickets are $1 each. Samplings range from one to four tickets which is not bad considering all proceeds will help cover the cost of the amazing services offered by Hospice of the Triad.

In addition to the very tasty cuisine there will be two stages of entertainment and if this year follows past years plenty of opportunity to show off those dancing shoes.
